Recipe: Rau Cau (Vietnamese Jello)

Yesterday I talked a little bit about the inspiration towards what I chose to be the dish brought to the Oscar party that was thrown by friends. Just to keep things simple I actually found a rather common recipe used to make Rau Cau that uses generally the same ingredients that my mother and I used for our version. As always I will start with what I found online that you guys might like and then I’ll talk about how the one I made differs.

Now below is the recipe used by the Ravenous Couple:

Below are the directions provided:

Have multiple, ideally 3, small saucepans ready. Split the agar packet into thirds for each layer. The amount of condensed milk/sugar is really up to you as some people like this mildly sweet and some really sweet, so adjust according to your tastes.

For the coffee layer, heat about 1.5 cup of water in small pot, add about 1/3 of the agar packet, stir constantly until the agar dissolves. Add 2 tbs of instant coffee, add about 2 tbs of condensed milk or 2 tbs of sugar and a drop of vanilla extract. Taste, adjust condense milk/sugar to your taste and bring to boil. Carefully pour this into your mold. This will slowly set so in the meantime, start the next layer.

For the coconut layer, heat about 1 cup of water and can of coconut milk. Add 1/3 of agar packet and stir constantly. Add about 2 tbs of condensed milk or sugar and then adjust to taste and bring to boil. Before adding to the bottom coffee layer, check to make sure it is not fully set…test with your finger–it should not perforate through but spring back but still slightly sticky. You don’t want it too soft or else the coconut will just mix with the coffee. Conversely, you do not want it to completely harden or else the layers will slide apart when cut. Carefully ladle on the coconut layer to the slightly hardened, but sticky coffee layer.

Finally, for the pandan layer, heat about 1.5 cup of water, the rest of the agar packet, 1 tbs of pandan extract (if using pandan leaves, tie in bundle with twine and remove at last minute), 2 tbs of condensed milk or sugar, and a drop of vanilla extract and 2 drops of green food color. Stir constantly and adjust to taste and bring to boil. Now you’re ready to add the final layer. Again, before adding this layer, check to make sure the coconut layer is slightly hard and still sticky to the touch and then carefully ladle this on.

Let the jelly cool at room temperature or refrigerate to quicken the process (around 10 min-the thinner and larger surface area, the quicker it will set) and enjoy!

Endeavor: Oscar Night’s Dish Inspiration

Since the Academy Awards was just a couple of days ago, one of my friends threw an Oscars Party where everything was themed in accordance to not only the nominees for Best Picture, but others as well.

I chose to create a dish for the occasion and since I was coming to the cooking party late I had minimal choices…

In the end I decided to create a dish inspired by a drama film: The Master… a film that I knew absolutely nothing about. Sometimes I am really glad that Wikipedia exists.

After reading through the summary provided I latched on a few key words:
– alcohol
– ink blots
– sex
– paint thinner
– Slow Boat to China

Yeah, I know… an interesting list. So what did I plan to do? Well originally I wanted to create a savory dish and had my mind set on make pate chaud for the Oscar Party… however, the issue i was having was how to tie that to the film that I chose.

Then after a few nights of not thinking about it, inspiration hit me… there was a jello that my mother made for parties that when created looked like a crazy mess which would actually fit with the idea and themes of the film. However, the primary ingredients for the jello included:
– coffee
– coconut
pandan leaves

So how to invoke a feel and theme that I wanted so that it would tie in with the film?

Reflection: Oscars Snub at the VFX Industry

Yes… it is a big blob of green… or more specifically the green used for the “Green screen” for visual special effects.

But let me go back a bit…

One of the things that bugged me was the botched up (and semi-funny) presentation for the Visual Effects award done by The Avengers clan. At the moment I am sure a lot of us were just rolling our eyes, but when I started listening and relistening I realized something…

It felt like they were goofing and stalling… why?

The San Francisco Gate said it best:

Biggest Oscars snub: A shark attack on the VFX industry

What happened? Well according to the SFGate.
Well they turned on the light to the one thing that was bugging me during Bill Westenhofer’s thank you speech… specifically right when he was cut off:

Sadly, Rhythm & Hues is suffering serious financial difficulties now…. I urge you all to remember…

Not only that, but the producers of the Academy Awards cut him off using JAWS musical.

Sadly, I will admit it was rather funny in the moment… which was probably what the producers were going for… but in hindsight reveals something far more sinister.

Fleeting: 2013 Oscars Thoughts

Seth MacFarlane… I <3 you.

Well there were others that I truly enjoyed, but honestly Seth made the show for me… behind Tina/Amy and NPH… Seth just skyrocketed up my list of award show hosts that I wouldn’t mind hosting again in any capacity.

And that’s probably because my sense of humor is dark and perverted enough to truly appreciate what he did as host of the Oscars over the weekend. Though the addition of
– Captain Kirk (the William Shatner version)
– Channing Tatum / Charlize Theron dance sequence
– Daniel Radcliffe / Joseph Gordon Levitt / Seth MacFarlane Broadway-ish sequence
– Be Our Guest…
Definitely helped him and the writers (unless he wrote a fair chunk of it himself).


Oscars 2013 – Opening Number With Seth… by IdolxMuzic

Now I had forgotten that Charlize has dance training, but I knew that Channing was more of a hip-hop dancer… you can see the lack of extensions and polish in Channing’s movement. But as a few of my friends (and me) were critiquing his dancing, one thing I did notice was that he actually had pretty strong partnering skills. He was there for Charlize in the lifts, dips, turns, etc… and that is just half the battle in ballroom dancing… but I digress.

Daniel and Joseph singing and dancing with Seth? O.M.G. that was the cutest thing I ever saw, granted Daniel was glancing down at his feet on occasion, but seriously, what’s not to love?

Oh… and did I mention the “Boobs” song? I know that if I were able to I would have been rolling on the floor in laughter.

Though I’ll admit, using Seth as opposed to a “voice from above” announcer voice was a very good call… a very very good call, if only because that meant more joking and ribbing from him and in my point of view and taste that is perfectly alright by me.

Fleeting: Modern Adaptations of Old Classics (Shakespeare Edition)

Being a lover of Shakespeare, I am always on the look out of modern adaptations to some of Shakespeare’s works. Some have been hits (for me) others have been misses (you gotta have some) and some fall in the in between.

So what worked for me may not work for you guys, but hey, that’s what opinions are for, no?

Keep in mind these are adaptations that are also modernized… I will not be looking at pieces like Baz Luhrmann’s Romeo and Juliet… which is essentially the play with a modernized feel, what’s the point.

ROMEO AND JULIET
West Side Story
This has got to be the most obvious. Taking a look of who kills who, what happens to whom and most of the ending (Juliet doesn’t really kill herself as much as she may want to). It is well written, well composed, and chock full of dancing, singing, and drama. Classic in a Romeo and Juliet piece.

Fleeting: Pokemon Inspired Evening Wear

Yup you read that right… someone out there decided to design evening dresses using the various Pokemon as inspiration. Sometimes they work, sometimes they don’t but more often than not they are fun to see.

After skimming through some of the designs posted on the 29 Cent Pens blog, I found myself leaning towards some styles that not only are doable for me, but are items that I am sure that I could put together with relative ease and still have it look good on me (one hopes anyway).

What got me on this particular realm? Well… basically when I came across Wigglytuff and realized that I could adapt the drawn image out of items from my own closet:

So what other styles from this site has also caught my attention? Well I have primarily pinned them via my Pinterest “Fantasy Clothes” Board.

Granted there has been a whole “movement” of people who have been designing casual or evening wear inspired by any and all characters across the spectrum.

Another such site is Disney Bound which I have mentioned in a previous post.

Maybe my fascination with Pokemon is because I am back on the Pokemon “gotta catch ’em all” phase of the old Gameboy Color series, you know… the original 251 Pokemon before everything kind of blew out of control. Just give me Pikachu and Jigglypuff and I’ll be very happy… unlike Kirby who is still giving me nightmares… but that’s a story for another day.

Reflection: Going into Cryogenic Sleep

Not long ago there was a new article via my RSS Feed about a young sleep who was dying from a terminal form of brain cancer, to be exact: Glioblastoma multiforme. After exhausting all options including (but not limited to) trial and experimental treatments however nothing slowed her cancer and she was given months to live.

According to the Huffington Post, originally Kim Suozzi called to reddit for donations for to “do fun things before she died” and later decided that the one thing that would give her peace was to be preserved via cryogenics.

In fact, according to her blog, this turned out to be her final wish.

I want to be cryopreserved upon my death. Many of you know that I’m agnostic; I don’t have any clue what happens when you die, but have no reason to think that my consciousness will continue on after death. The only thing that I can think to make me feel a little more at ease with my death is to secure cryopreservation plans on the off-chance that they figure out how to revive people in the future. The way I see it, it’s a better bet than decomposing or getting cremated.

As much as it pains me to say it (being raised Roman Catholic) I have to agree with her to some extent. Do we really know what happens after we all passed from this Earth? Not really… and to quote the movie “Contact” with Jodie Foster:

Ellie Arroway: So what’s more likely? That an all-powerful, mysterious God created the Universe, and decided not to give any proof of his existence? Or, that He simply doesn’t exist at all, and that we created Him, so that we wouldn’t have to feel so small and alone?

Oh the joys of the scientific mindset… the bane of my existance, but how does the above quote relate to death? That sometimes it is easier to believe that our consciousness lives on as opposed to suddenly stop existing altogether. We as humans would prefer to believe that a part of of lives on or that there is that sense of immortality as opposing to say that death is the equivalent to no longer existing…

But I am getting ahead of myself.

After several months of being busy non-stop during the days and evenings both on weekdays and weekends I suddenly find myself in a position where I may actually have time to kill.

So now what?

Ever since Seth Rudetsky’s off chance comment of turning the musical Chess into a movie… my imagination has been going into high gear of inspiration of various writing projects that I wanted to get back into or desiring to start again.

Fleeting: Blithe Spirit by Noel Coward

Someone once told me:

If someone claims to have been in love multiple times, they don’t really know what love is

The irony in this statement is that I remember once upon a time when a small group of us were talking about whether we have ever been in love before. And we went around the group… a few of the people have been in love multiple times or believes that they were in love at the moment. But me? I had to think, I grew to love one guy… I liked others… I was in love with the idea of being in love with another guy… but being in love with someone? Nope, hasn’t happened… at least not the full fledged thereof…

There are some people I know that are with someone because it is comfortable and eventually they have grown to love one another… a kind of jaded view on the concept of love but when you’ve been burned over and over again could you blame them? There are others that jump from person to person to person because chances are deep down the idea an concept of being alone frightens them… even though to every one else they appear to be guy or girl crazy…

I am not saying that I am any better… but speaking as someone that has been alone (voluntarily) for close to seven years straight and makes a conscious effort to be alone after a falling out of a relationship as opposed to jumping straight to the next person waiting in the wings… well I would like to think I have a better feel of the kind of person that I am.

Which is kind of odd that my latest role was the part of Elvira in Munroe Park Theatre Guild’s production of Blithe Spirit. Early in the process the director sat down with myself and a couple of other actors and went into more detail as to how these particular characters are acting and reacting in particular situations.

Fleeting: Miss Saigon Characters (Wish List: Round One)

Still no update on whether or not a Miss Saigon film is a “go” but I figured that as an extension of my original “wish list” in regards to a possible Miss Saigon film adaptation… I’ll provide my idea / vision of the character breakdown for various character parts.

Keep in mind I prefer to stay away from “fantasy casting” so don’t be expecting me to do any “name dropping” as it were. Though thinking this through I think it would be best if I broke this down into two posts… one for the Vietnamese only characters and another for the non-Vietnamese cast. Also (time-permitting) I’ll list out all the side characters from the original Miss Saigon musical that have bit parts in the songs that I think are significant enough to have decent cameos (if necessary).

So to make my life easier (and I’ll explain why in the next post) I’ll work on the non-Vietnamese characters first… these will include the obvious: Chris, John and Ellen… and I will add in “The Engineer” as well to which I will explain at the end of this post, but first:

CHRIS and JOHN
I think this would have been obvious. Americans… doesn’t have to be the stereotypical blond haired / blue-eyed Americans… or Caucasians, but heck anyone that you can see from the Army at some point during the 1970s. Sure the traditional look from musical theatre between Chris and John is one African-American and the other Caucasian, but it isn’t absolutely necessary. What is more necessary is how they look… do they look like they have been through the military boot camp of evil and tossed into an exotic place like Vietnam and rampaged through the jungles of the city of Saigon and not know what the heck is going on? Do they look worn down by the stress of war to the point that they are about to break?

ELLEN
So by extension Ellen (though obviously American) I feel should have a quiet strength to her. Someone that is steadfast, but not overbearing. A light at the end of the tunnel, someone who worked to be a sounding board for Chris for so long and is not only incredibly patient, she stands her ground… after all she is willing to “fight” Kim to keep Chris.

Fleeting: Period Correct Persian Fashion

Back in 2012, via my RSS feed, there was an article about an artist that was in the middle of a series of various Disney heroines reimaged to wear period accurate clothing. Me being the curious cat I tended to be was intrigued and sifted through the images available and was floored with what I saw.

Jasmine (from the Aladdin series) was one character I would love to attempt to pull off if I had the abs for her… and I don’t. But even if I did I still would have preferred to be as historically accurate as possible, so when I saw what the artist had drawn up for her I was disappointed when I couldn’t see the front of the outfit due to the position drawn of the character.

Le sigh…

Fortunately after a little more digging around the artist provided information about their primary inspiration for the piece that stemmed from pre-Islamic Middle East (aka Persia).

Finally! My aunt (dad’s eldest sister) has a website up and running: Nhã Uyên Fashion.

In fact, ever since I visited Vietnam for the first time… I have had pants made by her and I have never gone back to wearing or purchasing any slacks in America since. Yes, I am a very happy camper.

Fleeting: Disney Bounding

Not like this is anything new or what not, but I am a huge Disney geek. Granted I don’t show it off… I don’t see the need to, but among some of my more vocal Disney friends… I consider myself up there.

So when talking to a friend about the upcoming trip to Disneyland I was seriously considering if I could Disney Bound there. “Disney Bound? What’s that?” Well Disney bounding is a term coined recently by a blogger that started putting outfits together that were inspired by various Disney characters. Pretty much anything goes. Essentially with all the Disney characters (and others that may tickle her fancy) she puts together outfits that you could either wear everyday, out on the town, while exercising…

Which brings me to the original purpose of this post, “Who or what am I going to Disney Bound?” Well, I don’t know. Right now I have close to full costume-ish ideas for Esmeralda, Briar Rose (when she is living with her three fairy godmothers)… which I could easily tap into for any potential costume related parties down the road…
