Recipe: Pineapple and Coconut Ice Cream

After visiting my parents for dinner one day I was given a container of fresh pineapple… and instead of eating it, I decided to create some ice cream with it.

Say what?

Let’s just say this was my attempt in creating pina colada ice cream, with alcohol of course.

So what did I do?

Well I cheated, I used a container of coconut ice cream I made a few months earlier that used the following recipe from Girl Cooks World

INGREDIENTS:
* Two 15-ounce cans full-fat coconut milk, divided
* 3/4 cup sugar
* pinch salt
* 2-1/2 Tablespoons cornstarch
* dried, unsweetened shredded coconut, toasted (optional)

DIRECTIONS:
Combine all but 1/4 cup of the coconut milk, sugar and salt in a heavy-bottomed saucepan. Bring to a simmer over medium heat. In a small bowl, whisk together the cornstarch and the remaining 1/4 cup of coconut milk until smooth. Add to the saucepan and cook, stirring constantly, until the mixture thickens and can coat the back of a wooden spoon.

Remove from heat and let cool to room temperature. Cover and chill at least 3-4 hours, or up to 24 hours.

Freeze the mixture in an ice cream maker according to the manufacturer’s instructions. Serve with a sprinkle of toasted coconut, if desired

Then I added:
– 1 cup of heavy cream
– 1/4 cup of rum
– 1/4 cup of powder honey
– crushed pineapple

Needless to say, amongst the few friends that were given the chance to try it… it was a hit. And unfortunately as always I tend to forget to take pictures…

Hopefully that will change in 2014. 😉

Reflection: End of 2013 – Homework

So I started this last year, inspired by my friend’s list of things that she had accomplished in the past year when going into the new year… Since last year I had a list of items that I have completed in some capacity and what I was planning to do in an effort to continue into 2013 let’s see how my scorecard went:

1: Complete a full length play
2013: So I stared at the completed play and decided that I needed to do a major rewrite, but before I put pen to paper I was playing in my head of how I would like to story to go with only half of the cast. So while the original play included ten cast members, this I hope to bring down to only five.

2: Complete a ten-minute play
2013: Ironically, the whole “close to being public” got even closer. Close enough to the point that I am setting up a table reading soon. So why am I stalling? Well, I am currently editing another ten-minute that is tied with this one with two others simmering in my head. So perhaps that table read is going to have to wait til at least one other play is ready… preferably two additional.

3: Travel out of state more to visit friends
2013: Well, let’s see, I
– February: flew out to Anaheim for a friend’s Disneyland Birthday
– March: drove out to Rochester, Minnesota for FablesCon
– August: drove to Pennsylvania for MusikFest
– August: flew out to San Jose for a cousin’s wedding
And with more trips on the horizon, I think I am doing alright here.

4: Hit the community theatre audition circuit harder
2013: I did audition, but it wasn’t as much of a fruitful onstage year like it was in 2012, however, I learned a lot and worked on some things at home… so only time will tell if the work was worth it.

5: Work backstage
2013: And how… diving into Stage Managing, and with a planned trip to Los Angeles for a one-night only production… I think I found something that would be a worthwhile counterpoint from acting. However, I am also learning another skill set that only time would tell if it would be resume building.

6: Give someone a (second) chance when I felt they deserve none
2013: This, ironically, extended to a party this year that I did not expect and even though I felt I was being the bigger person and things were ok for a little while… everything kind of reverted back to square one and in the end it just wasn’t worth it. Ah well.

7: Reconnect with old friends
2013: Wow, this really took a 180 degree turn around in a lot of areas. It is true that you know who your friends are when you need help moving. Granted I did pick and choose people more this time around, but it was more because after I knew who was definitely going to help, who else could I invite where the personalities would blend… and if someone’s personality wouldn’t blend even though I knew they would help, I couldn’t bring myself to ask…

8: Polish my singing voice
2013: This still trip me up in vocal auditions, but I am slowly working towards being more confident in what I am capable of, let’s see what happens though.

9: Control my workload
2013: Even though this worked out for the most part in 2013, who knows if this would be the case in 2014. Time will tell I suppose.

10: Attempt NaNoWriMo
2013: Yeeeeaaaaah, this totally didn’t happen. Going to attempt again in 2014.

11: Focus on my secondary “career”
2013: Well, the secondary didn’t happen as much. However, a bunch of other irons that were in the fire are becoming rather ripe. So let’s see what happens in 2014.

12: Submitting writing works
2013: Just for the hell of it, I submitted a ten-minute play recently, though I doubt it would be picked up and that’s ok… as soon as I finish a few other things I’ll start submitting more and see what happens.

13: Spending more time with family
2013: After losing one set of grandparents in 2012 there is this need to spend more time with my parents and grandparents more this year than I ever did in the past. Although I managed to do this consistently throughout 2013 with my parents, that is not the case with my grandparents and that is going to have to change in 2014.

And what do I have planned for 2014?

Losing weight! Ok, no, not really… not exactly like that in any case, but more along the lines of bringing my size down to what it was back in early-2012 and I want to say that I am part way there, but who knows…

I will be at a point in my life that I am likely to want to get back into ballroom dancing and I think my ankles can handle it this time around… it is just the matter of timing, so I suppose my hope for 2014 would be to:

Expand my interests and hobbies… because one could never have enough.

Reflection: NBC’s The Sing-Off Season 4

So I totally mis-understood the televised schedule for this little gem and decided that since it is already a few weeks after the “finale”, I am probably better off just posting my thoughts about NBC’s The Sing-Off on my personal blog as opposed as on the PureTVNet.com blog… at least until I get my life back to relative normal instead of burned-out.

In case you don’t know, NBC’s The Sing-Off:

[…] showcases the country’s top a cappella groups performing popular songs in ways that viewers have never heard before. “The Sing-Off” has no lip-syching, backup bands or safety net.

Granted even though the series has been on hiatus for over a year, it was nice to see this back on the airwaves. However, one cannot help but wonder if this was because of the slowly growing success of Season Three’s winner Pentatonix?

And if you have been living under a rock for the past year… here is Pentatonix’s Evolution of Beyonce:

The fourth season of “The Sing-Off” showcased ten a cappella groups over seven weeks of singing, competing for a recording contract and $100,000…

So who won?

Fleeting: The Difference Between E, E and N

Once upon a time (meaning back in college) a few friends of mine and I were talking about the different mentality of the various “social” classes in America… not in the sense of financial (nor the current times) but how people were brought up over the generations that became prevalent.

Oddly enough it appeared to be fairly simple as to the priorities of each classes in past generations:
– Lower Class: Entertainment
– Middle Class: Education
– Upper Class: Networking

Nowadays the above “priorities” are blurred between classes, but in a lot of ways they still do define what makes someone successful in life over the year and who is bound to struggle.

– I regret not arriving until 1am on Saturday morning…
– I regret having to leave by 5pm on Sunday evening…

Fleeting: I love Surprises, as Long as I’m not the Receiver

Odd isn’t it? I love giving surprises to other people but I really can’t stand surprises myself.

So what brought this on? Well recently a small group of friends and I put our heads together to plan out a surprise party for another friend who needed a bit of a boost.

Without going into details said friend had gone through a difficult time in their life and is slowly going into an upswing. We wanted to give said friend an additional boost in this upswing in hopes that he didn’t lose the momentum prior to this difficult time.

They were surprised, happy, and humbled (their words all changed around) with what was given to them and it gave all involved a warm, fuzzy feeling inside to know that we have done a good deed…

But naturally I started thinking: “If someone were to throw me a surprise party of some sort how would I react?”

Every time I asked myself this question I always come up with the same answer:

Reflection: The Fear of Being an Advocate

How often do we post about some of the crazier thinking that have been going on in society nowadays? How often do we comment about something going on in the world and how crazy and silly and stupid it is and move on with our own lives…

Better yet in the smaller scheme of things has anyone found themselves in the position of persuading a group of people as to why what they are considering is wrong and detrimental to the grand scheme of things and what would be the best course of action in the long term?

Yep… been there… done that… once… about seven years ago…

I was working in a completely different company from what I am doing now and the position that myself and six other groups members were a part of was on the chopping block and we were going to be folded into another group with our responsibilities shared to the larger whole. Meaning what we spent years specializing in was going to be shared across a group three times the size. Higher risk of error, higher risk of causing a major dent to the detrimental of the larger populace.

So my group was scheduled for a meeting with the administration to explain and plead our case. I originally had planned that day off for personal reasons (potential-beau at the time was visiting from out of country for he lived in the Netherlands) but after coaching the other members of my team various arguments, points, and reasoning as to why what the administration was planning was detrimental… it came to pass that the group would be stronger with myself there as opposed to away.

Endeavors: Dancing with the Chef’s Table (Samba)

For the Chef’s Table that occurred last night the theme chosen was Ballroom Dance styles… courtesy of moi. 🙂

So what were the dance styles that people were allowed to pick out of the hat? Well they include:
– Waltz, Viennese Waltz, Tango, Argentine Tango, Foxtrot, Quickstep
– Rumba, Cha Cha, Paso Doble, Samba, Jive, Swing (East Coast or West Coast), Mambo, Bolero
– Polka, Two Step

Why not Salsa? Too easy… that would have been waaaaaaay too easy. Besides the Salsa is sometimes known as the lazy man’s Mambo because the Salsa hits on the down beat (1 and 3) whileas the Mambo hits on the off beat (2 and 4). Yes, I am that kind of a geek… so sue me…

But not really sue me.

So I managed to pick the one dance that I claim to be weakest at: Samba.

And I also managed to pick the course that I would have a gloriously difficult time with: Soup!

Salad would have been soooo much easier.

Whenever someone in the dancing world shouts “Samba” the immediate connection is the Brazilian Carnivale… aka one big massive party. Which led me to having a party in your mouth… which lead me to fireworks… aka Pop Rocks!

Right, a recipe that uses Pop Rocks… I am so getting shot.

Reflection: Blogging at the Pure TV Network

I think I am burned out… at least when it comes to blogging on Pure Dancing With the Stars.

Well I kind of knew that when I wasn’t interested in working through the spreadsheets during the off season in favor of doing more personal stuff. But I think what did it was when I didn’t even have the Pre-Season Elimination post started and the start of the season was a day away, that was when I knew.

It’s not that I am overwhelmed… I am never overwhelmed, I love to keep busy and having a million plus one projects on my plate so every moment of my life is kept busy and if something else were to fall through I could sift through all the umpteen number of projects and work on something else.

I think what is doing it is that I am focusing more and more on being creative as opposed to analytical.

Reflection: Disneyland Trip (Pre-Posts)

Two months ago, myself and a bunch of friends got together on the West Coast to celebrate the birthday of a mutual friend. There was two contingents showing up in the Magic Kingdom which included one from Chicago and another in the Los Angeles area.

To say I had fun is an understatement… I truly enjoyed myself… however, I also became ill during this trip and as thus was in bed half the time as well. Ah well.

So how am I to break this down? Well between Disneyland and Disney’s California Adventure there is a lot to go through… so I guess I will try it this way…
Part One: This will deal primarily with what happened pre-Disney Birthday Day. Arrival, hotel, planning, hanging out… etc.
– Part Two: Will be devoted to what was done during the big birthday day, what we did together… what happened when we all splintered off… etc.
– Part Three: Disneyland. Anything not covered in Part Two from Disneyland would be covered in this particular post
– Part Four: Disney’s California Adventure. There were a couple of moments that myself and a friend ventured off into DCA since she was only going to be around for a day. So this post would be devoted to whatever I was able to do outside of Part Two (which is a lot).
– Part Five: What I Missed. Regrets, things I wanted to do that I didn’t get to do, or things I wanted to get but didn’t for various reasons. This might include the supposed trip to L.A. that never happened.

Yeah… it is going to be rather lengthy series and I probably won’t get to everything right away… but the hope is that I will be able to sort through all the photos and have all the videos uploaded so that I could actually get this going.

And since a few people that missed out on the trip are looking for details… well here is my perspective, but for starters if you missed the original post here is a little something that came out of the trip: Men’s Musical Pants… *evil cackle*

Endeavors: One Woman Cabaret Show

During the summer of 2012 I was helping a friend organize her thoughts for possibilities of a cabaret show based on the various men in her life. She was in only one major relationship in her life and she ended up marrying him, but she always found herself in other situations that dealt with men while in college and thereafter.

That got me thinking, if I was as beautiful of a vocalist as she was what songs would I use in the cabaret show of my love life… Or lack of one? I have had my fair share of ups and downs when it came to men… Most of the people I surrounded myself with were men… But considering my major of choice was that really any surprise?

Take that a step further: of a conversation a friend of mine and I had about wishing that our lives were just one big musical how would that sound like? What moments in our lives would we just break out into song for? A massive soundtrack of my life so to speak would be the better way to describe it.

Well… ironically enough, I have been to a few weddings where one of the party favors that the guests were allowed to bring home with them was a CD of various songs that the happily married couple put together that they felt best describe their life. So I decided to conjure up a list of songs that would make up the story of my life up to the current moment in time. Each song below is a defining moment in my life when it comes to my interactions with relationships… Unfortunately for you I won’t tie the songs to any names, what’s the point?

Since I am a huge show tunes fan I will provide two lists… One that involves the mainstream / pop / radio songs. The other would be strictly show tunes. Unfortunately for you, you are not going to be able to see who or what each of the following songs would pinpoint in my life… but that is the joy of it, no?

Fleeting: Miss Saigon Characters (Wish List: Round Two)

Last month, I started a character breakdown of potential major roles in a possible Miss Saigon adaptation of the musical for film and started with the non-Vietnamese characters and even included “The Engineer” into the round up.

Next up we have the Vietnamese characters which includes Kim, Thuy, and the callgirls from Dreamland… so let’s start with the elephant in the room: Kim.

Oh… and as a fair warning… I am going to be on a major soap box when it comes to Kim. So please just bear with me and humor me while reading this…

KIM
As mentioned in my original Miss Saigon Wish List, I will (personally) only be content with the casting of Kim iff (if and only if):

[…] The future production team of the Miss Saigon film takes a page from the Memoirs of a Geisha film production […] Although there is a lot of hype surrounding Jessica Sanchez and she has the blessing of Lea Salonga it will not work if the characters that are suppose to be Vietnamese natives are speaking near-perfect English.

How is that not appropriate? Well according to Kim herself:

I’m seventeen, and I’m new here today
The village I come from seems so far away

Not only that but when “The Engineer” introduces Kim to the other callgirls he also mentions:

Surprise!
I found this new girl, get her dressed
From the country untouched

She is fresh from the country where (for anyone that has ever been to Việt Nam) chances are high that her English is not only weak, but her accent is very strong. Granted… if EVERYONE in the film was one nationality (like how everyone in Les Miserables was French) I wouldn’t be jumping off the deep end with everybody have to have an accent or weak English… because everyone is from the same cultural background… in this case, we have two very different cultures colliding. What works for the stage isn’t going to work for film from my vantage point.

So what would I consider to be the most appropriate? Looking back at my original post:

A Vietnamese American, perhaps someone along the lines of Jacqueline Nguyen the believed first Vietnamese-American to ever play the role of Kim in Miss Saigon. If a touring production was able to find Jacqueline Nguyen there must be someone comparable or better if the net was tossed wide enough.

There are major Vietnamese communities in Chicago, Orange County (there is after a several block radius also know as “Little Saigon” there), and Texas. Tap into those areas… you’d be surprised with the results. Granted, considering that Memoirs of a Geisha did not cast the lead with a Japanese actress they did have a point as to why:

A director is only interested in casting someone he believes is appropriate for a role. For instance, my character had to go from age 15 to 35; she had to be able to dance, and she had to be able to act, so he needed someone who could do all that. I also think that regardless of whether someone is Japanese or Chinese or Korean, we all would have had to learn what it is to be a geisha, because almost nobody today knows what that means–not even the Japanese actors on the film.

Anyway… I’m getting off my soapbox.

THUY
He eventually becomes part of the Việt Minh, which would mean that his English could be pretty poor. Also he is most likely a Vietnamese national… not only that but according to the lyrics:

KIM
[…] We were promised at thirteen
The woman I’ve become is not the same

THUY
That promise made by your father I will claim when we win
To break a vow of your parents is worse than a sin

KIM
My parents got themselves killed in the week you changed side
If there were promises all of them died when they died

Typically country folk arrange marriages with their neighbors… and taking a similar approach as with Kim above there really isn’t much question as to how Thuy should be cast. Anyway… I am not touching that soap box.

CALLGIRLS: Gigi, Mimi, Yvette, Yvonne
How much do you guys want to bet that the callgirls’ names are no where near what their real names probably are? In any case there is a lot of flexibility that can happen with casting here. Yvette and Yvonne are French in original so they could be closer to “The Engineer” in the sense that they look Eurasian.

They all appear to have been part of Dreamland for quite some time, so their “mastery” of the English language is stronger than that of Kim’s or Thuy’s. However, their accents still need to be rather strong… though one could get away with them having a weaker accent than that of Kim’s and Thuy’s. It might even been their worthwhile to have Yvette and/or Yvonne to have more of a French accent since there were schools throughout Việt Nam where French was the primary language (how do I know this? I have family members whose primary education were in a French primary school… so don’t rail at me. :D).

Then again there isn’t much that we know of the callgirls of Dreamland, except for “The Movie in Their Minds” as it were, this could be rectified in the film with a couple of additional songs, or a reworking of the script / book… but really as long as they stay true to what I mentioned with Kim above and apply it to the callgirls (with a little more flexibility thrown in) it will be ok… for the most part.

So this is round two of the Miss Saigon Character Wish List… which all the main characters / players already mentions what’s left? Well I am sure you guys are curious as to what other parts could be available for the taking? In Miss Saigon Characters (Wish List: Round Three), I will personally take the time to look through the scripts I have on hand and point out cameos that are worth a look-see.

Reflection: If I Had Gone Into Teaching…

For the longest time I believed that I would have gone into teaching as my career. That didn’t happen despite my extensive resume working in education either as a tutor, counselor, orientation leader, academic adviser, credential specialist… well the list keeps going.

However, as much as I would have loved to be able there in the front lines to corrupt inspire young, impressionable minds I will have to admit that a part of me is rather relieved to not have gone through that particular route…

Moreso now after reading the CNN article about what teachers would love to tell parents.

There has been a growing wave against teachers by parents versus for… and it is appalling to see this transition over time. Now I do have several friends that are parents and there are certain situations when I understand the need to confront teachers (as it were) but for the most part… for the average student… no… not really.

This article focuses on three primary points:
1) Please quit with all the excuses
2) Parents, be a partner instead of a prosecutor
3) Teachers walking on eggshells

Possibilities: After The Lizzie Bennet Diaries

For any and all fans of Jane Austen’s Pride and Prejudice who were hooked on the online adaptation called The Lizzie Bennet Diaries the next question is now: “What’s next?”

Although the showrunner Bernie Su mentioned that there are a few ideas out there – but won’t say what exactly – it is up to the fans of web series to speculate what could work in a similar format.
